Loaded Italian Sub with Roasted Red Pepper Aioli


Note: This recipe makes more aioli than is needed for this sandwich. Also note: You will need a panini press or a flat grill pan for this sandwich.

1/4 lb Genoa salami
1/4 lb Italian mortadella
1/4 lb Prosciutto
Produce
1/2 cup Basil, fresh leaves
1 head Garlic
1 tsp Oregano, dry
2 Red bell peppers, large sweet
2 Roma tomatoes
Condiments
1/2 cup Mayonnaise
Oils & Vinegars
6 tbsp Olive oil, extra virgin
Bread & Baked Goods
1/2 loaf Italian or french bread at least
Dairy
1/4 cup Muenster cheese
1/4 cup Parmesan reggiano
1/4 lb Provolone cheese, aged good quality
1 cup Scamorza mozzarella or regular mozzarella
Other
¼ pound sliced sweet or hot (your preference) capicolla (also known as capocollo, or coppa)
